- Scrub the potato and place whole into a casserole dish with a large, peeled onion.
- Add a little water and bake until both are cooked.
- Chop the cooked onion and put into saucepan with the diced, cooked beet.
- Heat through.
- Split open the potato and fill with the onion and beet mixture. Alternative - cut up potatoes into wedges
- Mix together the yogurt, dill and flaxseed oil (if using the flaxseed oil, wait untill the potato is no longer steaming) and drizzle over the top.
- Serve with a green salad.
