Baked Potato with Beet and Onion
[wpurp-searchable-recipe]Baked Potato with Beet and Onion – – baking potato, Large onion, peeled, beet, diced and cooked, Yogurt (Certified Organic, Fat Free), Dill, flaxseed oil (optional), Scrub the potato and place whole into a casserole dish with a large, peeled onion.; Add a little water and bake until both are cooked.; Chop the cooked onion and put into saucepan with the diced, cooked beet.; Heat through.; Split open the potato and fill with the onion and beet mixture.; Mix together the yogurt, dill and flaxseed oil (if using the flaxseed oil, wait untill the potato is no longer steaming) and drizzle over the top.; Serve with a green salad.; – [/wpurp-searchable-recipe]
  1. Scrub the potato and place whole into a casserole dish with a large, peeled onion.
  2. Add a little water and bake until both are cooked.
  3. Chop the cooked onion and put into saucepan with the diced, cooked beet.
  4. Heat through.
  5. Split open the potato and fill with the onion and beet mixture. Alternative - cut up potatoes into wedges
  6. Mix together the yogurt, dill and flaxseed oil (if using the flaxseed oil, wait untill the potato is no longer steaming) and drizzle over the top.
  7. Serve with a green salad.
