- Slice the eggplant lengthwise. Heat a griddle pan. When pan is hot, turn down the heat, place the slices of eggplant on the griddle and allow them to cook slowly, Turn over the slices and repeat. Before serving, squeeze garlic over the slices, sprinkle with chopped parsley and drizzle lemon (or lime) juice over them. Serve with potatoes.
