Stuffed Pepper

  1. Halve the pepper and seed it.
  2. Place it open-side up in an oven-proof dish.
  3. Stuff leftover mixed, chopped vegetables into pepper halves.
  4. Place slices of tomato over the top.
  5. Cook at 350° F (180° C) for 40 to 50 minutes or until the pepper is soft.
  6. Serve with broccoli or another very green vegetable.
