- Tomatoes, sliced

- Halve the pepper and seed it.
- Place it open-side up in an oven-proof dish.
- Stuff leftover mixed, chopped vegetables into pepper halves.
- Place slices of tomato over the top.
- Cook at 350° F (180° C) for 40 to 50 minutes or until the pepper is soft.
- Serve with broccoli or another very green vegetable.
