- Parsley
- 2 clove
- Garlic
- 1 Juice of
- Lemon

- Flax Seed Oil

- Chop both ends off the zucchinis and cook whole.
- While they are cooking, finely chop the parsley and crush the garlic.
- Mix with the lemon juice and flaxseed oil.
- Put into a serving bowl.
- When the zucchinis are cooked, halve lengthwise (if small) or slice thickly (if large).
- While still hot add to the serving bowl and toss in the mixture.
- Serve immediately with oven-roasted bell peppers, a baked potato, and a green salad.
