Zucchini with Garlic and Parsley

  1. Chop both ends off the zucchinis and cook whole.
  2. While they are cooking, finely chop the parsley and crush the garlic.
  3. Mix with the lemon juice and flaxseed oil.
  4. Put into a serving bowl.
  5. When the zucchinis are cooked, halve lengthwise (if small) or slice thickly (if large).
  6. While still hot add to the serving bowl and toss in the mixture.
  7. Serve immediately with oven-roasted bell peppers, a baked potato, and a green salad.
