- apple cider vinegar
- 2 tbsp
- water
- 2 tbsp
- mint, roughly chopped

- Cook the zucchini gently until just cooked but firm.
- Cut both ends off, then cut diagonally into thin slices.
- Put into a small casserole dish.
- Mix the apple cider vinegar, water, and chopped mint and pour over the sliced zucchini.
- Bake gently in the oven at 300 degrees Fahrenheit (149 degrees Celcius) until warmed through.
- Cool and serve with a baked potato and a green salad.
